Rare 1974 Deluxe Edition of the CULINARY ARTS INSTITUTE Encyclopedic Cookbook by Processing and Books, Inc.

Features 974 pages plus a 64-page index. Measures 6 1/4” x 9”. The edges of the pages are decorated with book block patterns. Appears to be hand-signed by Ruth Berolzheimer. Has die-cut thumb notches on chapters. This is a sewn book with hard covers. The spine cover was detached at some point and was reattached with clear tape (see photos). There is an inscription on the back of the front end sheet (see photo). It also shows a traditional recipe and page number that cooks hand-noted when a particular recipe was used. It doesn’t affect the book's usability due to being smyth-sewn hardcover. The cover is attached with full printed end sheets front and back. Shipping and insurance included.
